Every part of the product is controlled directly by Owner and Winemaker, Eric Donaldson. The fruit is sourced entirely within the Lodi appellation. | Method Champenoise provides an elegant and long-lasting sparkling wine since the bubbles are produced through fermentation in the bottle. The fermentation takes much longer resulting in a much finer bubble. Due to the nature of the chemistry of bottle fermentation, there is a much higher level of craftsmanship in producing method champenoise compared to other methods of producing sparkling wine. | |
